Does anyone know what the OEM spring rates are on the bike (front and rear)?

I have a 2004 R1100S.

My 02 R1100S owners technical booklet states:

Front suspension....spring compression 55mm (2.17 in). Spring extension 55mm (2.17in) ...total travel 110mm (4.33in) fixed tube diameter 35mm (1.38 in)

Rear suspension ....spring compression 95mm (3.74 in)...spring extension 35 mm (1.38 in) total travel 130mm (5.12 in)

Moderately helpful info but it won't give you the rate which is a function of diameter, turns and modulus of rigidity of the material it's made from.

An online calculator will get you in the ball-park.
