I'm fitting a brake flasher/modulator that requires an LED bulb both for lower amperage and faster flashing than an incandescent bulb would afford.
Will an LED brake light work without throwing the works into a fit? I'm thinking the 2001 is pre CANBUS so it might work out alright.

R1100S is not CANBus. Good old fashioned electrics. The Hexheads was the first CANBus BMW bikes. If you fit an LED bulb make sure it has a resistor build in to mimic the resistance of a halogen bulb. Only effect on the 11S would be faster flashing of the indicator without the resistor. Personally I wouldn't bother with LED but then mine doesn't do a lot of mileage.

I tried to fit an LED bulb without success - the tail light flickered and the ABS dash warning light stayed on constantly - but in the end changed the bike to an R1200S !!!

All right, fitted the LED tail/brake light. Seems to work fine: very bright and flashes very fast with the modulator.
I took it for a very short spin to see if the ABS lights would go out. They stayed on (which is not unusual for this bike). Sometimes they stay on for the first few rides after a layoff. Hopefully a bit of riding once I get all the other maintenance chores done will get the ABS lights to go out.
