Last December I picked up a 2007 R1200S. It has about 37,000km on it with the sports suspension. In anticipation of the new riding season and creating a baseline for the bike, I just completed the 20K km service + annual inspection according to the BMW manual and checklist.
In reviewing the service records, there is no indication that the suspension has ever been serviced. Is there a recommended or generally accepted interval to servicing the suspension? Are there different levels of service, i.e. just change the oil, or full rebuild, etc.

Usually for a shock it involves taking it apart and then rebuilding with fresh oil. I use MCT to do the shocks on the 11S and I can't fault them.
You won't notice the degrading in suspension just as you don't notice wear on the tyres but if you put new tyres on you rave about the improvement. It is the same. Service the shocks at about 18k - 24k miles or every 2 to 3 years depending on how many miles you put on. That is what I would do.
If you want to tune the suspension to your needs and weight then it can get expensive but a general service and rebuild is not that expensive. For road riding then the above would be ideal. For the track you'll do it more often because the suspension works much harder.
