The 700's have cast wheels, 19" front, and "normal" forks and are considerably lower, and 10 hp less along with taller gearing in line with their more road focus.
The 800's have taller upside down forks and longer rear shock and the 21" front wheel, along with more aggressive styling and shorter more dual use gearing.
To be honest riding both I found both pleasant rides practicality would have pointed me at the 700 but I liked the more aggressive off road look of the 800
.... and I guess the 800 commands a busier used market.
The 800 has surprised me, I ride totally different on it than I do on the K or the 'cup. It's now done 8000 miles and I've not taken it over 5000 rpm yet, which is 80 mph. Happy enough riding it around 70 - 80
